WSVN-7 News: Deco Drive - Verde Kitchen Cafe
Farm to table. It's a trend that's gaining more and more steam as diners and restaurants become more health-conscious. At a new So-Flo cafe, serving locally grown products is a no-brainer because the place is attached to a farm! Deco's Chris Van Vliet has plowed up all the deets.
It's all about farm to table at the Verde Kitchen Cafe in Homestead, and why not? The place is located on a farm where all the ingredients are grown.
Chef Adri Garcia: "Actually, it makes it easier for me, because I like cooking from what I have, and I don't really want to outsource from far away."
Using what the farm provides tests the Chef's culinary skills, but she doesn't mind.
Chef Adri Garcia: "It actually makes it more of a challenge, and I believe the food tastes better."
The place is redefining the term "fast food."
Chef Adri Garcia: "I knew that I wanted quick service but real food, so I wanted to make something that somebody could pop in and pop out, all in the same time that it takes you to go to Burger King or McDonald's."
The Eggplant Burger has found a home between the buns.
Chef Adri Garcia: "Eggplant just sliced, we grill it, and then we put a little bit of olive oil and garlic, and then we just put it back on the grill and we cover it with provolone."
The Half Pesto, Half Margherita Pizza is ready for devouring in a matter of minutes.
Chef Adri Garcia: "So we have pesto that we make from our basil that we grow here, and then we have a margherita pizza, which is basically tomato and the basil as well."
Any eatery dependent on a vegetable farm is bound to make a tasty salad. Case in point: the Green Goddess.
Chef Adri Garcia: "Specifically, we're using local avocados, so we're using a lot of micros, and we're using shoots, and then it's a spring mix."
It's not all about what's on the plate. They make a mean smoothie, too.
Chef Adri Garcia: "Well, right now our smoothie bar is fruits from the summer, so it's mango, mamey. We are using strawberries."
Homemade natural ice pops can quench a mean thirst, too. They're part of the variety of products you can pick up while you're at Verde Kitchen Cafe.
Guest: "I like the atmosphere of the kitchen. It's just a very beautiful place."
Verde Kitchen Cafe is open for lunch Tuesdays through Saturdays between 11 a.m. and 3 p.m. Those hours will expand in the fall, but for now, that's it, that's your window. Go check it out.
